The New Yorker's A to Z of NY Food: P is for Pizza

Morning! This is @jamespomerantz back with another day of my A to Z of New York Food. P IS FOR PIZZA! This isn't about wood, coal or brick-oven pizza, buffalo mozzarella or San Marzano tomatoes, all of which I love dearly. This is about the New York slice, shimmering with melted cheese grease, on a white paper plate, ready to be folded for easy portable consumption (I wonder if William Carlos Williams ever wrote a pizza poem). Some say it’s New York’s tap water that makes the pizza special. Whatever the reason, I’ve never found a slice quite like New York's anywhere else. Personally, I think it's the ritual.
