The New Yorker's A to Z of NY Food: X is for Xiao Long Bao

I’ve had more questions about what I would be photographing for X in my A to Z of New York Food than for any other letter in the alphabet. Most people guessed xanthan gum or xo sauce. It’s time to reveal that X IS FOR XIAO LONG BAO! Xiao long bao are what we also know as soup dumplings. Of all the dumplings available in NYC, XLB are the ones I most often crave. Served in a bamboo steamer, soup dumpling look much like any other steamed dumpling. Their magical secret is inside their wrapper. Usually stuffed with pork, sometimes with crab too, XLB also contain a gelatinous broth that is solid when cold, but very hot and liquid when served. One wrong move when eating a soup dumpling can result in a scalded mouth or stained shirt, so please be careful out there. I usually head to Sunset Park for mine out of convenience but word is Nan Xiang Xiao Long Bao in Flushing and Shanghai Cafe Deluxe make a damn fine XLB. #newyork #food #dumplings Photo: @jamespomerantz.
